Cocktail Friday – Slow Gin & Tonic

To me, an utterly Byron Bay inspired drink (because you know, Byron Bay issue and all) is a classic gin and tonic. Balmy afternoons with bare feet are all about tall icy drinks after all. But today, we’re taking a little twist on this old favourite – by using a special brew from an amazing local to Byron distiller- Cape Byron Dstillery and their brand Brookies!

One of my favourite tipples is the Brookies “Slow Gin” a drink I discovered at the beloved gin festival Junipalooza some years ago. It’s their take on a traditional sloe gin, but with the oh so Australian Davidson plum. It’s got this delicious, tangy, sourness to it, and works beautifully with tonic and a little lime (finger lime is of course preferred, but as we’re in the #stayathome mode we have to use what we have!)

A gin and tonic is all about the chill factor, so make sure you have plenty of ice. Good tonic water is always a must and completely changes the drink. So look for a smaller, more independent brand (we love Capi & Fevertree around these parts)


  • 60ml Brookies Slow gin
  • Tonic water
  • One lime
  • Ice


  1. Add ice to a glass
  2. Add sloe gin
  3. Top with tonic water
  4. Squeeze a lime wedge into the glass
  5. Stir well
  6. Garnish with lime wedges.
