Ingredients:

  • 45ml Paperbark Infused Cruzan Rum*
  • 8-10 Mint Leaves
  • 6 Lime Chunks
  • 15ml Bartender Simple Syrup
  • Fill with Bundaberg Ginger Beer Dash of Angosura Bitters

*Paperbark infused Rum

  • 3 inches of fresh paperbark
  • Bottle (700ml) Cruzan Rum

Method:
For the paperbark infused rum, place the roll of paperbark into the Cruzan (or rum of choice). Leave overnight. Then strain & bottle.

Build all ingredients over crushed ice and swizzle. Garnish with mint sprigs. Serve in a highball glass with two paper straws.

Captain Melville’s cocktail list is inspired by the 1850′s era, with cleverly named cocktails that draw on the history of the period. The pub itself is named after legendary bushranger, Captain Melville, who roamed the Victorian countryside in the era.
