If you’re preparing a feast for your guests at home and are looking for something edible to give them as a gift, look no further than these delicious flavoured oils! Garlic and chilli, fresh basil and mandarin all make gorgeous and rich oils, which can be used during your feast, or in dainty bottles to be taken home by those you love.

What You Will Need:

–  Clean and sterilised jars to decant the flavoured oil into

–  Good quality olive oil

–  Your chosen flavours. We used chill & garlic, mandarin, and fresh basil

–  Saucepans, stovetop, sharp knife and chopping board

–   Funnel

Step 1. 

For the mandarin oil, peel 3 medium-sized mandarins, placing the skins into a heavy-based saucepan. Enjoy the flesh as a snack! Cover the skins with 1 cup of good quality olive oil, then place on low heat for 25 minutes. Ensure the oil doesn’t get too hot, but rather warms the skins thoroughly. Remove from heat and allow the oil to cool. Place some of the mandarin peel into your clean and sterilised jar, before covering it with oil (a funnel is handy). Seal the jar and keep it somewhere cool. Use within one-two weeks.

Step 2. 

For the garlic and chilli oil, squash a bulb of garlic, and choose 7 cloves. Peel and place into a heavy-based saucepan with one large chilli and one cup of good quality olive oil. This will make an oil that is reasonably spicy. Place the saucepan over low heat for 25 minutes, aiming to heat the oil, rather than cook the garlic and chilli. Remove from the heat and allow to cool. Place one chilli and 2-3 chopped cloves of garlic (from the heated saucepan) into your clean jar, cover with oil, seal, and use within 1-2 weeks.

Step 3. 

For the fresh basil oil, shred the leaves from one basil plant (approximately 1 cup). Gather two bowls and boil the kettle. Into one bowl, pour ice-cold water. Into the other, place the basil leaves, and the boiling water. Allow the leaves to sit in the boiling water for 20 seconds, before removing and placing them immediately into the ice water. Remove from the ice water, and place them onto a paper towel. Once most of the moisture has been removed, place the leaves and 1 cup of good quality olive oil into a blender, blending until well combined. Sieve the oil into your clean and sterilised jar, seal it, and use within 3 days.
