Pink Grapefruit, Cucumber And Lemon Thyme Infused Gin

Gin is a fantastic tipple on its own, but when you add these complimentary botanicals, it’s lifted to another level.

Try it out on your bridesmaids, mix it up into a signature cocktail or pop little gift-wrapped bottles on the tables for favours.

What you need:

– 750ml clean bottle or jar with a lid

– Peeled rind of 1 pink grapefruit

– 1/2 Lebanese cucumber, quartered

– 8 sprigs lemon thyme

– 500ml gin

Place the grapefruit rind, cucumber and thyme in the bottle/jar. Pour over the gin. Seal and place in the refrigerator for one week, shaking occasionally.

Strain the gin into a jug and pour into a clean, dry bottle or jar. It is shelf stable once the fresh ingredients have been removed.

Combine with mixers as you would for a cocktail. I like to have it with tonic water, grapefruit slices and ice so you can really taste the flavours but it would also be great with lemonade.

Makes about 1 1/2 cups.

It can easily be doubled or tripled as required!

Ms Chinoiserie Says: The hint of lemon thyme combined with the gin and grapefruit is so refreshing; mixed with lemonade, it’s just wonderful!
