There’s something about a garden wedding in summer that just feels easy.

Chairs slightly crooked on the lawn. Kids running past with no shoes on. Someone’s aunt claiming a shady table and not moving all afternoon. It’s relaxed, a bit messy, and exactly how it should be.

By the time drinks roll around, no one wants anything heavy or complicated. You want something cold, light, and properly refreshing. Something you can sip while standing in the sun without feeling like you need a nap afterwards.

That’s where this one came from.

The Summer Garden Spritz is soft and crisp, with cloudy apple juice for that fresh orchard flavour, a splash of gin for bite, a little elderflower for sweetness, and plenty of soda to keep it bright and fizzy.

It tastes like something you’d drink under a tree while everyone else is setting up the dance floor.

We finished it with the dried green citrus slices from Mixso Magic, which make the whole thing. They float on top and catch the light, and suddenly a very simple drink looks like you’ve made an effort (the best kind of hosting trick!)

Ingredients

  • 45 ml gin
  • 60 ml cloudy apple juice
  • 15 ml elderflower liqueur (like St-Germain)
  • Soda water, to top
  • Ice
  • Dried green citrus slices (we used Mixso Magic)
  • Fresh mint, thyme sprigs or apple slices (optional)

Method

  1. Fill a large wine glass or highball with ice.
  2. Add the gin, cloudy apple juice and elderflower liqueur.
  3. Top generously with soda water and give it a gentle stir.
  4. Garnish with a dried green citrus slice and anything fresh you have on hand, mint, apple, or both.
