To us, pastel yellow is all about wild daisies swaying in a field, luscious buttercream slathered on vanilla cakes, and softly streaming afternoon light. And now, we think of this pastel take on their Phillip Lane cocktail too! Zesty and herbaceous, the gin in this drink is elevated with the addition of vermouth. Thyme gives it that French influence that Kittyhawk is known for.

Phillip Lane cocktail by Kittyhawk

Ingredients

30ml gin
30ml Bianco vermouth
20ml fresh lemon juice
1/2 green kiwi
10ml simple syrup
1 sprig of thyme

1 twist of lemon, to garnish

Method

Muddle the kiwi and thyme in a shaker. Add the rest of the ingredients, except garnish. Add plenty of fresh ice and shake until chilled. Double strain into a cocktail glass. Garnish with a lemon twist, squeezing it to express the oils over the glass first.
