Irish cream and pistachio fudge

For a truly indulgent edible wedding favour, you can’t go past fudge! This adults’ version featuring Bailey’s is especially perfect if you or your fiance have an Irish background.

You will need:

  • Non-stick cooking spray
  • 400g can sweetened condensed milk
  • 200g brown sugar
  • 125g butter, chopped
  • 2tbs liquid glucose
  • 100g white chocolate melts
  • 100g pistachio nuts, roughly chopped
  • 1 1/2 tbs Bailey’s Irish cream

Method:

1. Spray an 18cm square slice tin with non-sticking cooking spray. Line with baking paper.

2. Place the condensed milk, sugar, butter and glucose in a medium saucepan over low heat. Cook, stirring regularly, until ingredients are completely combined.

3. Add white chocolate and liqueur and cook, stirring, until mixture is smooth.

4. Stir in the pistachios.

5. Pour the mixture into the prepared tin. Set aside for 1 hour to cool to room temperature. Place in fridge until firm.

6. Slice into cubes or fingers and keep refrigerated in an airtight container.
