If, like me, you are partial to a glass (or two) of bubbly, and also appreciate a refreshing cocktail on a sunny day, this is one you will enjoy! These loves of mine combined when we recently hosted a pink themed gathering (pre-isolation days, of course).

The highlight of the drinks menu was undoubtedly Jamie’s signature cocktail, the ‘Pink Gin Spritz’, which was a huge hit and the most raved about cocktail on the menu.

Not only does this refreshing cocktail taste absolutely delicious, but it actually slowly changes colour from clear to a graduated pink as you sip your way through it. Pretty cool, hey!

Ingredients
(80ml measurements for short glasses, 120ml for tall glasses)

  • 40ml Pink Gin (we used Beefeater)
  • Sparkling Brut 80-120ml
  • Sugar free lemonade 80-120mls
  • Ice
  • Frozen strawberries

Method

Place ice in the empty glass (my personal favourite glass for this cocktail is a stemless wine glass). Pour each liquid ingredient in to the glass, stir then pour frozen strawberries on the top to garnish (these will give you the graduated colour changing effect as you sip away!).
