These mojito-inspired ice cubes make the perfect day-after long drink. Packed with lime and mint flavours, they are delicious in a tall glass, topped up with fizzy water.
You can make a big batch well ahead of time and store the ice cubes in an airtight container in the freezer until required.
What you need to make one tray of mojito cubes:
– 14 small mint leaves (one for each cube).
– 1/2 lime, zested.
– 1/2 cup water.
– 1/4 cup lime juice.
– 1 tablespoon light agave syrup. You can also use sugar syrup if you have it.
Divide the mint and lime zest amongst the ice cube holes. Combine the water, lime juice and agave and pour into the tray. Freeze until solid.
