Be forewarned: Valentine’s Day (or Gal-entine’s Day or Pal-entine’s Day, however you like it) is mere weeks away. So it’s time to brush up on your cocktail skills if you wish to treat a special someone to a little liquid love.

Naturally, our chosen tipple for the occasion must be pink! Today’s cocktail, by Pumphouse Sydney, is a simple twist on a French Martini made even more seductive with the addition of vanilla. Did you know vanilla is far more expensive by weight than gold? So you can skip the jewellery store this Feb 14th (results may vary). They like to use a fresh raspberry for garnish but freeze-dried raspberries are an intensely sweet-sour alternative. Or try a lolly raspberry for the sweet tooth in your life.

Pumphouse Sydney is a recently made-over brewery, pub, and event venue with a style that combines modern industrial with art and craft (beer). Their new Terrace, overlooking Darling Harbour, would be sublime for a day-after-the-wedding recovery brunch.

Without further ado, we give you – The Heritage Cocktail by Pumphouse Sydney!

Ingredients

30ml vanilla vodka
30ml Chambord black raspberry liqueur
60ml pineapple juice
Fresh raspberries, to garnish

Method

Measure all your ingredients and pour into a cocktail shaker with some ice. Shake your ingredients in the cocktail shaker until chilled. Strain into a coupe glass and garnish with a fresh raspberry on a small skewer placed gently on the rim of the glass.
