When it comes to all things Aussie, we had two very clear ideas in mind for The Australia Issue and today, I introduce you to the decadent, the delicious, Polka Dot Bride Lamington cocktail.

It is, of course, a creamy base, but this Lamington cocktail includes all the nods you need to this favourite Australian treat. It’s packed with coconut flavour (thanks to using coconut milk as our base), a little chocolate, a little raspberry (to honour that jammy filling) and of course, plenty of yum factor! Serve this one up on your wedding day for your nostalgia loving guests.

Ingredients

  • 45ml Coconut Cream
  • 30ml Raspberry Liqueur
  • 30ml Milk
  • 30ml Creme De Cacao
  • Grated Coconut
  • Grated Chocolate
  • Ice

Method

  1. Add ice to a cocktail shaker
  2. Add coconut cream, raspberry liqueur, milk and creme de cacao. Shake until well combined and chilled.
  3. Rim your glass with coconut
  4. Strain cocktail into a glass
  5. Sprinkle with grated coconut and grated chocolate
