Oysters three ways
Lola says, “Oysters are one of the best food sources of zinc, which we need for so many functions in the body, but zinc is also a key player when it comes to skin, hair and nail health. Here are some simple ways to jazz them up.”

Ingredients
24 oysters
Natural
lemon wedges, to serve
Chilli and lime
zest and juice of 1 lime
1⁄3 cup (80 ml) apple cider
vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon coconut sugar
1 chilli, nely chopped (remove the pith and seeds if you don’t want it too hot)
6 coriander leaves, finely sliced
Vinaigrette
2 tablespoons white wine vinegar
2 tablespoons red wine vinegar
1 spring onion, very nely sliced
pinch of salt flakes
Method
For natural, just serve the oysters with a few wedges of fresh lemon (this is actually my favourite way to eat oysters, especially when they’re super fresh).
For the chilli and lime combo, all you have to do is mix the ingredients together in a small bowl until the sugar dissolves, then serve them with a teaspoon so you can spoon the dressing over the top of each oyster before eating. The same goes for the vinaigrette – mix everything together well in a bowl, then use a teaspoon to drizzle the dressing over the oyster before slurping it down!
