Polka Dot Punch

For our second week of Ginuary, this Polka Dot Punch may just be one of my favourite recipes that the patterned people whipped up in our cocktail making frenzy.

I love cocktails that are light and fresh for warm days and I especially love the idea that this could easily be served as a post ceremony celebratory drink – add edible flowers like we did for a touch of pretty! Fresh fruit flavours with gin and plenty of bubbles are all about celebration!

Ingredients:

  • 15ml mandarin juice
  • 30ml peach schnapps
  • 10 ml raspberry coulis
  • 15 ml gin
  • 60 ml Prosecco
  • Ice

Method:

Combine mandarin juice, peach schnapps, raspberry coulis and gin in a cocktail shaker and shake well. Pour into glass over ice and add Prosecco.
