At Peter Rowland Catering, this is one of our favourite winter recipes; the delicious curry combined with the aromatic kaffir lime scented rice is just perfect for sharing. Pair it with a glass of wine (or two!) and enjoy dinner in with friends this weekend!
Roast duck curry with grilled pineapple, sweet potato, red capsicum, baby corn, snake beans and kaffir lime scented rice
Ingredients – Red curry sauce:
– 1 onion, diced
– 3 garlic cloves
– 1/3 stalk of lemon grass, crushed
– 2 tbs red curry paste
– 2 tbs palm sugar
– 500 ml coconut cream
– 4 kaffir lime leaves
– 2-3 tsp fish sauce
– 1 Peking duck, cooked and sliced into chunks
– 200g grilled pineapple slices
– 200g sweet potato, blanched
– 200g red capsicum, cut into triangles
– 10 baby corn
– 20 snake beans
Ingredients – Kaffir lime scented rice:
– 400 g basmati rice
– 400 ml water
– 6 kaffir lime leaves, crushed
– pinch salt
Method – Red curry sauce:
Heat a pan with some oil, add the onions and sauté until translucent. Stirring continuously, add the garlic, lemongrass, red curry paste and stir continuously for 2-3 minutes or until the paste starts to release its fragrance.
Add the coconut cream and bring to the boil. Reduce the heat and add the remaining ingredients and simmer for 5 minutes.
Remove the pan from the heat and set aside.
Method – Kaffir lime scented rice:
Wash the rice in a sieve until the starchiness disappears. Put the rice in a pot and add double the water to the rice.
Add the crushed kaffir lime leaves and pinch of salt. Place on a high heat and bring to the boil. Lower the temperature to a very low flame and cover the pot with a tight fitting lid, simmer for 10 minutes, stirring occasionally until cooked. Remove from the heat.
To Serve (4-5)
Heat the red curry sauce with the duck and remaining vegetable ingredients, allowing them to heat through. Serve on top of the rice and garnish with fresh coriander.
