Double Bay’s Niji Restaurant is always a great place to hit up for amazing Japanese fusion cuisine and I’m thrilled to be sharing one of their incredible cocktails in this week’s Cocktail Friday! For something with plenty of flavour, try out the Pai Mei’s Mule Cocktail! With Fennel infused vodka, herb and spice laden Fernet branca and bitters – it’s sure to get your Friday night (or wedding celebration!) started off on a flavoursome note.
Ingredients:
30ml Fennel infused vodka
15ml Shochu
10ml Fernet branca
2 drops Angostura bitters
15ml Sugar syrup
20ml Lime juice
10ml Orange juice
Topped with ginger beer
Garnish: Fennel Heart and Liquorice stick
Method:
- Pour all ingredients with crush ice then shake.
- Strain in a jar and top up with ginger beer
- Garnish with fennel heart and liquorice stick and enjoy the “Herbal concoction with a bitter note”
