This is a drink we serve in late winter or early spring. Most people don’t know this but the best time of year for citrus is the cooler months. Same as oysters but that’s a different story! In 2016, we started working with finger limes and playing with different citrus-based cocktails. This one is a beauty and can even be enjoyed warm.
You Will Need
- 1 ornate tumbler
- 50ml good quality gin
- 120ml ginger beer
- 1/2 green chilli
- 20ml fresh lime juice
- 2 teaspoons of finger lime pearls (cut finger limes in half and simply squeeze out the little pearls)
Method
Combine all ingredients in a tumbler and garnish with chopped chilli and a sprinkle of sea salt flakes. For the warm version, heat the ginger beer up gently. Combine all the other ingredients and pour the warm ginger beer over the top.
