We are right in the middle of our heathy cocktail month here at Polka Dot Bride, so it was only natural to call on Masterchef and ABC’s Surfing the Menu star, Dan Churchill (also known as “the healthy chef”), to join in on the ‘New Year, New Me’ festivities. If this exact platter of Dan’s Green Juice Coconut Cocktails was served up to me as a healthy hair-of-the-dog libation at a wedding recovery party, I’d be saying “two please!”
Healthy Green Juice Coconut Cocktail
Dan says, “Sometimes having a drink is finding the right balance between happiness and indulgence. Well with this Healthy Green Juice Coconut Cocktail, you get that feeling of being at your local health food spot whilst letting your hair down a little with your closest girlfriends. Full of all the amazing antioxidants, it will ensure your next morning will have you reaching for your workout gear and not a greasy breakfast. This is what I love to serve a bunch of friends at a gathering. My advice would be to make a big batch of the juice, I do this every week, which you can make for your every day. Just top up with the alcohol for those special occasions.

Health Facts: Ginger helps to activate your receptors and assists in absorption of all nutrients. Having the kale and cucumber do wonders for your hydration and coupled with the ginger allows your body to get the antioxidants and digestive agents that assist in getting rid the of the alcohol efficiently.
Ingredients:
2 Kale leaves
1 Cucumber
2 Apples
Juice of 2 limes
1 knob of ginger
1 tsp Agave
1/2 shot of Coconut Liquor
1/2 shot of Tequila
To Finish
Salt rim
Fresh Mint
Method:
- Juice kale, cucumber, apples, lime juice, ginger and agave
- To make a salt rim pour 2 tsp of lemon juice onto a flat plate and an even layer of salt on another. Dip the rim of a glass into the lemon juice and then onto the salt plate. Repeat with other glass.
- Add ice to the tumblers and pour in the alcohol before pouring in the juice and finishing with the fresh mint
