Rhubarb Raspberry and Rosehip Cocktail

Swooning over this gorgeous image was reason alone for us to try Barker’s of Geraldine‘s Rhubarb with Raspberry & Rosehip Cocktail with Flower Power Ice; divine! Add to that the delicious taste of the fruity syrup and Cointreau mixed back with vodka and we were in Cocktail Friday heaven! Imagine serving this beautiful refreshment at garden party wedding under the shade of a jacaranda tree (hopeless romantics aren’t we?!)  A perfect day!

Ingredients for 2 serves:

  • 1/3 cup gin or vodka
  • 2 tbsp Cointreau
  • 3 cups water
  • ¼ cup Barker’s of Geraldine Squeezed Rhubarb with Raspberry and Rosehip Syrup
  • Ice
  • 500ml soda (optional)

Method:

  • Mix vodka, Cointreau and Barker’s of Geraldine Squeezed Rhubarb with Raspberry and Rosehip Syrup
  • Divide between two glasses
  • Add ice – and for a lighter version, soda

Flower Power Ice Cubes
Making decorative ice cubes is a breeze. Use a combination of edible flowers and fresh herbs such as tiny sprigs of mint and thyme. Simply pop them in ice cube trays with distilled or pre-boiled water.
