Saigon Red Cocktail

For this week’s Cocktail Friday, I’ve well and truly been transported to the tropics!!! Created by Dan Weal at The National Hotel, the Saigon Red’s combination of lemongrass and mint with the tang of lime and vodka only gets better with the hint of ginger! Serve it as a pre-dinner drink and the pop of colour is sure to impress too!

Ingredients:

1/4 red Dragonfruit (small  – medium sized) fresh fruit
1 teaspoon chopped ginger
1 teaspoon chopped lemongrass
1 sprig of Vietnamese mint
20ml lime juice
30ml Vodka
15 ml Ginger liquer
10ml simple sugar syrup

Method:

Muddle ginger, mint and lemongrass in a shaker. Add chopped dragon fruit, lime juice, vodka, ginger liquer and sugar syrup and shake hard.

Double strain into a pilsner or sling glass. Fill with ice and top with soda. Garnish with mint and wedge of dragon fruit.
