Niji Restaurant is famous not only for their incredible Japanese food, but I dare say their cocktails are always something people keep coming back for. The Taxi Driver is designed for those who love whiskey and still have to drive, which makes it a bit of fun for a wedding too in my book!
Mind you, I think serving the delectable Eastern treats (Like Niji’s Zuke Salmon; a plate of cured salmon with a slice of tomato, swimming in a broth of shiso, coriander and crème sauce and garnished with lemon zest) might have to be on your wedding menu!
Ingredients:
40ml Scotch whisky
5 pieces of watermelon
6-7 Mint leaves
10ml Lemon juice
10ml Apricot Brandy
15ml Agave Syrup
Top with Soda Water
Garnish: Watermelon wedge with mint spring
Method:
- Mash watermelon then stir mint and whisky with crushed ice.
- Pour in other ingredients while adding ice.
- Top up with soda water and enjoy!
