This years The Wedding Collective in Brisbane was THE place to see and be seen (you can read my full review here). So it seems only fitting that Northshore Riverside Café served up the hottest cocktail to have in hand… a Skinnygirl Cosmo.

This fashionable, low-calorie cocktail was created, and made famously popular, by reality TV star Bethenny Frankel of The Real Housewives of New York. The fun cocktail has all the taste but none of the guilt of other drinks, so brides-to-be who are watching their weight in the lead up to their wedding will love this darling little tipple. It really is a fun and flirty drink to enjoy with your best girlfriends.

Ingredients:

–       Skinnygirl Cosmo

–       Lime Wedge

–       Sugar (to garnish)

–       Strawberry (to garnish)

–       Crushed Ice

 

Method

1. Wet the rim of a martini glass with a lime wedge

2.  Dip the rim in sugar

3. Add crushed ice to the glass

4. Pour Skinnygirl Cosmo drink over the crushed ice

5. Garnish the glass with a succulent strawberry

6. Cheers to a good life, love and health !

Oops… knowing this cocktail was low-calorie, I accidentally found myself indulging in some delicious treats from the cake cabinet at Northshore Riverside Café… next time I think I’ll ask them to remove the cakes before I arrive… scrumptious!
