Mango Daiquiri
Makes 12
Ingredients
- 6 mangoes, peeled, chopped
- 1 1/2 cups white rum
- 1 1/2 cups vodka
- 6 lemons, juiced
- 1 cup sugar syrup (see note)
- 6 cups crushed ice
Method
- Combine half the mango, half the rum, half the vodka, 3/4 cup lemon juice and 1/2 cup sugar syrup in a blender. Blend until smooth. Add half the crushed ice. Blend until just combined. Pour into 6 cocktail glasses and serve immediately.
- Repeat using remaining ingredients.

As the last of the summer fruits come to the markets it may be the perfect time to indulge in a Mango Daiquiri celebration. Think beaches, long stretches of white sand and azure blue water in a warm tropical location. Palm fronds, ginger flowers, orchids, frangipani, and lush tropical foliage enhancing a beach location dotted with bamboo chairs.
Soft floaty dresses in light colours, light coloured linen for the men, straw hats, thongs (flip flops), fans, parasols. Feminine maxi dresses, casual yet elegant – no Hawaiian shirts here!
As the sun sets flickering candles are set out and the feasting can begin. Our magnificent Australian seafood – scallops, prawns, barramundi, mud crabs – all laid out on long tables for a buffet on the sand. Use banana leaves and coconut husks as ‘platters’. Access the local organic produce from on-farm producers – from fruit and vegetables and meat to icecreams. For dessert anything with tropical fruit – mangoes, lychees, coconut, pineapple, pawpaw, black sapotes, banana, limes, passionfruit. From the fruit simply laid out in its gorgeous glory, to sorbets, tarts and icecreams – all will be devoured on a warm summer night.
For favours why not give your guests a momento of the tropics – organic coffee beans, vanilla beans, chocolate coated coffee beans, macadamia nuts and ginger.
Use natural elements for your décor – bamboo, driftwood, shells. Capiz shell to add lustre, lots of candles in bamboo or coconut husk containers, wooden or cream earthenware bowls. The smell of fragrant tropical blooms,the salty sea breeze and the crunchy sand underfoot – what more could you need for a perfect tropical wedding.
ah YUM. is it bad to feel like drinking a cocktail at 8.40 in the morning!
