Watsons Bay Boutique Hotel’s ‘Watson’s Sunset’

Your wedding is one day only, so we’re big fans of embracing the best of both worlds with a sunset wedding reception. Envision your guests enjoying the golden light of late afternoon, the spectacle of the sinking sun and then up the glamour stakes by nightfall. To do this you need a find a venue that has prime views (which Watson’s Bay Boutique Hotel – overlooking Sydney Harbour – sure does)! They’ve even created a unique ombre cocktail to celebrate the sunset hours which they’ve kindly shared with us below.

Watson’s Bay Boutique Hotel do like their weddings to be unique; you could request this pretty cocktail, a frose machine or a drinks trolley – whatever best suits your style! They’re also happy for couples to customise everything from your cake, table settings, menu and wine list to DIY desserts so your wedding is never the same as another.

Ingredients

  • 15ml peach schnapps
  • 30ml peach or lychee puree
  • Half a glass of ice
  • Roughly 150ml of tonic
  • 30-45ml of Ink gin
  • Thyme sprigs and edible violets to garnish

Method

Add each ingredient by gently layering in the order above, finishing by slowly pouring the Ink gin into the glass to create an ombre effect. Garnish with thyme and violets (or your favourite edible herbs and flowers to make it your own).
